Vegetarian Not-Meatloaf

On this new journey to eat a completely plant based diet I have been experimenting with giving some of my favorite comfort foods a makeover. One of my most recent recipes is for a meatloaf style dish. This dish is ovo-lacto vegetarian ( vegetarian the eats eggs and dairy) but can easily be make completely vegetarian or vegan with a few simple ingredient swaps.

What you will need:

2 Packages of Beyond Meat Beyond Burger Patties

2-3 Stalks of celery

1/2 -1 Onion

2 Cloves of garlic

3-4 Cremini mushrooms  (baby portabella mushrooms)

1 Bell Pepper ( If your pepper is large use half)

Italian Seasoning (I used fresh herbs from my garden:Sage, Thyme, Oregano, & Basil)

I/2 Teaspoon of sea salt

1/2 Teaspoon of onion powder

1/2 Teaspoon of garlic powder

Optional: 1/2 Cup of plant fiber( I used the plant pulp from my juicer I used as a binder)

1 Not Beef bullion

2 Tablespoons of  vegan Worcestershire sauce

1 Egg

1 Oatmeal packet (unflavored)

2 Tablespoons of warm water (for dissolving bullion)

Directions:

Preheat oven to 350 degrees Fahrenheit. While your oven is preheating chop celery, onion, bell pepper, garlic, mushrooms, and fresh herbs (if you are using fresh herbs). Open you Beyond Meat patties and break up into a mixing bowl.

Add all of your chopped ingredients as well as dry spices or fresh herbs, vegan Worcestershire sauce, and salt. If you don’t have a large bowl mix half of the ingredients together at a time until all are well mixed.

Add egg. To make this vegan replace egg with a flax egg. Add plant fiber( optional) and oatmeal packet. Combine well. Its crazy how much this looks like meat.

Mix Well

Transfer to loaf pan or baking dish. Mold to dish. Combine bullion and warm water. Pour bouillon over formed loaf.

Bake in the oven for 1 hour and 30 mins until the top and edges are crisp and brown. Combine tomato paste or tomato ketchup  salt and italian seasoning (or leftover fresh herbs) garlic powder, and onion powder. Dress the top of loaf.  Bake for an additional 5 minutes.

Let rest for 5 minutes. Plate with your favorite side dishes and enjoy. I hope that you challenge yourself to try this for Meatless Monday or any day you decide to declare meatless.
