Aquafaba Brownies

Everyone gets a sweet tooth sometime and these egg and dairy free brownies are the perfect treat. I know some of you are looking at the title and wondering what in the world is aquafaba. I  was wondering the same thing when researching vegan egg replacements. Come to find out that aquafaba is the liquid that’s left over after you cook or drain a can of store-bought can of chickpeas. Yes its sounds gross and weird to put bean liquid in a sweet treat  but I’m willing try almost anything once. Your baked goods will not taste or smell of beans at all. Trust me this is the best egg replacement for baked goods like brownies and cakes.


Liquid drained from 1 can of chickpeas ( aquafaba)

1 and 1/2 cup of sugar

1 teaspoon of vanilla

1/2 cup of pecans, macadamia nuts, and hazelnuts ( if allergic just leave them out )

1/4 cup of cacao nibs

1/2 cup of cocoa or cacao powder

1 teaspoon of baking powder

1 cup of dairy free chocolate chips or chocolate bar

1 cup of all-purpose flour

1 teaspoon of salt

1/2 cup of coconut oil ( This will give brownie the brownie the taste of coconut. If you don’t like coconut use vegan butter or grape seed oil.)

2  tablespoons of vegan butter for topping  ( I use earth balance)


Sift together flour, cocoa powder, baking powder, and salt. Set aside.


In large bowl add aquafaba and mix for about 1 to 2 minutes until your liquid becomes foamy.




Add sugar and vanilla continue to mixing with mixer set at second to lowest speed.





Increase speed slowly. Mix until you get close to a meringue consistency. This is what will act as a  binder for the brownies.

At this point it is time to fold in flour mixture, half of the nuts and cacao nibs and or chocolate bar, and oil. You will want to fold this in an “S” shape because you don’t want to take all the air out of your batter.

Pre-heat oven to 350 fahrenheit  or 176 celsius. Pour batter into a greased  or parchment lined baking dish. Bake for 25 to 30 minutes or until a toothpick comes out clean. In the mean time to prepare the frosting melt vegan butter and other half cup of chocolate chips in the microwave or double boiler.




After removing from oven allow to cool. Once cool apply frosting and top with other half of nuts if desired and dig in. This brownie is moist and gooey.  I had mine warmed with a scoop or two of homemade dairy free matcha green tea ice cream. Hands down the best brownie I have ever eaten. Enjoy.
